spaghetti squash

Tonight, I made a new recipe!  I've been wanting to try it for a long time and I'm glad I finally did!  When I researched spaghetti squash, I was overwhelmed with all of the yummy recipes!  I finally decided to try spaghetti squash au gratin.  Like I've said before, I'm a fan of any vegetable that can be turned into something yummy and starch like, but carb free!  

And let me just tell you--it was amazing!  It tasted just like hashbrown casserole!  My mind was exploding with goodness!  I had never steamed a spaghetti squash before, but it was so easy!   I cut it in half, turned the cut half face down in a dish with 1/4 inch water and put it in the microwave for 12 minutes.  

While my squash was steaming, I put some cut up onions on the stove.  I put in some ground thyme, red pepper, salt, pepper, and a little butter.  The recipe also called for sour cream, which I easily replaced with Greek yogurt.  Once the onions browned, I mixed them in a bowl with the yogurt and 1/2 cup of cheese.  Lastly, I pulled apart the spaghetti squash, mixed everything together and baked it for 20 minutes at 375 degrees.

This was my result... paired with a pork chop! Happy face :)
